This cut is taken from the shoulder muscle, which takes a lot of weight and works hard during the cow's life, and as such is a tough piece of meat with lots of connective tissue. It also has a rich, deliciously beefy flavour. Because of the toughness, this roast is best when cooked low and slow, in a slow cooker or roasted in the oven.
