Short Ribs are beefy, moist, and full of flavour. These ribs are very meaty and come from the chuck area of the cow, which is a busy muscle full of connective tissue. (Think of a Chuck Roast in terms of texture and flavour!) Because of this, they're best cooked low and slow to break all that down. Then you really get the bang for your buck with meaty, fall-off-the-bone rib meat. Try them barbecued or slow roasted!
