This is a thick, naturally lean steak with a bold and beefy flavour. Super easy to cook, this will soon become your favourite weeknight dinner steak. You're best off to use a fast cooking method with high, dry heat, like grilling or pan searing. Heat your cooking fat of choice (olive oil, butter, ghee...) on medium-high heat, then when the pan is scorching hot sear each side for three minutes before letting the steak rest. Voila! Because this steak is very lean, we recommend eating it medium-rare. You certainly wouldn't want to cook it past medium, as the steak would become dry.
