A unique Cheddar style cheese made from 100% goat’s milk, and the only one of its kind to be matured in caves in the UK. Cave Aged Goats Cheese is a deliciously mild, savoury, firm cheese which is similar to a traditional Cheddar in texture but with a distinctive yet subtle ‘goat’ flavour. The Cave environment adds yet another dimension to the ageing process. The year-round constant 12C and humidity bestows the cheese with the added benefit of rich, earthy and nutty flavours with caramel top notes.
Cave Aged Goats Cheese is made using British goat's milk. The cheesemakers use the same artisanal techniques as the Farm’s multi award-winning Cave Aged Cow’s Milk Cheddar, utilizing traditional recipes and methods that date back many centuries.
A young, fresh white wine with good acidity is great match with this mild, savoury cheese with just enough goaty notes! Perhaps a Sauvignon Blanc from the Loire in France, or maybe a Gruner Veltliner from Austria. Cave Aged Goats Cheese can be enjoyed as a table cheese, yet is also firm-textured enough to be grated onto pastas and salads as an ingredient. It is an ideal ‘Cheddar’ alternative to those who have a cow’s milk allergy.
