Description
Victor et Berthold is produced by the Fromagerie du Champ à la Meule. The cheesemakers use the raw milk of a neighbouring herd of Holstein cows. This cheese was originally made in 1996 by Martin Guilbault from the Fromagerie du Champ à la Meule à Notre-Dame-de-Lourdes. It's the merging of two names: the name of its creator, and the name of his uncle! The Réserve version of this cheese is aged forty days longer than the original, giving it unmistakeable character. Pair with Pinot or a brown ale.
