Tête à Papineau refers to a popular Quebec expression: "Ça ne prend pas la tête à Papineau!", or "It doesn't take Papineau's mind!" which references the very intelligent and talented orator, Louis-Joseph Papineau. On the cheese label, they recognize the mansion that the gentleman had built in Montebello in 1850.
This is a semi-soft pasteurized cow's milk cheese with a washed rind. It's matured for 60 days, which brings out its decadent flavours of crème fraîche, butter, dry hay, and hazelnuts. Product of Quebec.
