Surface ripened for over 6 weeks, this semi-soft, pressed, uncooked cheese is made from pasteurized partially skimmed cow's milk. Its rind is washed and rubbed with Quebec beer St-Ambroise, a magnificent marriage that enhances the fruity and lactic aromas of the cheese. Under its coppery beige color rind presents a pale yellow paste with a soft texture, slightly supple. The intensity of the cheese varies from mild to marked depending on the maturity of the cheese. Its fruity taste also presents notes of nuts and beer.
