This South-West Duck Confit delivers a unique palette of flavours. It has a melt-in-your-mouth texture and rich taste that can be appreciated both hot in the middle of a meal, or cold in a salad. Everything takes place in the South-West of France, within a radius of 100km around Labeyrie's workshop in Saint-Geours de Maremne. Raised by a cooperative of 237 partner breeders, prepared and packaged in the South-West and respecting traditional Labeyrie know-how, these ducks are 100% IGP Sud-Ouest (Protected Geographical Indication). This label guarantees the quality, the origin and the way of preparing local products.

This confit is the result of traditional and meticulous preparation. Everything is done in the Labeyrie workshops, where every gesture and every step is taken into account to express the taste of each piece. These skills are passed down from generation to generation. Each confit is cut by hand by Labeyrie's experts. The cutting is done piece by piece with a knife to preserve this noble material. The thighs are first salted slowly so that the salt penetrates to the heart and ensures a homogeneous taste throughout the meat. They are then slowly confit in duck fat, as tradition dictates.
