This steak was originally known as "the butcher's steak", as it wasn't often sold commercially and customers didn't ask for it. Now, however, Hanger Steak is seeing its day! This cut is best marinated in an acidic marinade and grilled hot and fast. Since it comes from a supporting rather than active muscle, the meat is very tender. This tenderness is lost, however, when the steak is exposed to dry heat for too long, so medium rare is the most that you'll want to cook this cut if you don't feel like chewing on leather!
