Fontina is a semi-soft, pressed cow's milk cheese that is believed to have originated in Valle d’Aosta, Italy—high in the Alps near the bordering France and Switzerland. This particular version is made in the Swedish style, with a red paraffin wax coating that controls ripening and gives it a unique flavour. The flavour is delicate and nutty, almost reminiscent of honey. There's a mild and refreshing taste of cream, which reveals a touch of salt. Pair with an Indian Pale Ale. Product of Canada.
