Fruity taste in every slice. Fol Épi is made and matured in a factory on the outskirts of Bretagne in northwestern France, where the climate is rainy and the air filled with Atlantic Ocean salt, according to a know-how perpetuated since 1919.
This firm cow's milk French pressed cheese develops its tender texture and its fruity flavours in the maturation cellar. It's made with milk from farms located mainly around the cheese factory. Fol Épi means "crazy wheat" in French. The cheese is coated with grains of toasted wheat, like a loaf of rustic bread. Wheat tastes penetrate the cheese while aging, giving it its unique flavour and aroma. This is a cheese of the Emmenthal variety, with a softer and more flexible texture.
Its delicate fruity flavours with accents of cream match perfectly with sesame to combine crispness and tenderness for an aperitif, or with an orange marmalade to combine sweetness and sourness! It's also delicious in sandwiches and on toasts, where it melts delightfully. The aroma of toasted wheat is accentuated when eaten with a slice of white rustic bread. It's best served with dry white wines, Sauvignon Blanc or Chardonnay.
Ingredients: pasteurized cow's milk, salt, ferments, preservative (in the rind): natamycin. The non-edible crust contains toasted rice flower.
