Flank steak is an inexpensive, versatile and flavourful cut of meat. It's extremely lean with little fat, but can be very tender when cooked properly. Simply season with salt and pepper or your favourite meat rub; then tenderize with a meat tenderizer, acidic marinade, or by cooking out the connective tissue low and slow. Let it rest for five minutes after cooking, and slice against the grain for a beautifully flavourful and tender piece of beef. Great for fajitas and stir fries.
