Our Butterfly Pork Chops are prepared by the butchers at Saslove's Meat Market. They take a thick, centre-cut pork loin chop and cut it in half lengthwise through the centre, leaving a small 'hinge' in the middle. This leaves the porkchop looking almost like a book - or like the wings of a butterfly!
Cooking these on the stovetop is quick and easy, but be sure not to overcook the chops; they're thin and can dry out easier than a full cut. The chops are done when a meat thermometer reaches 145 degrees Fahrenheit. They're an excellent choice for grilling, stuffing, pan-searing, and broiling. Butterflying the chop also means more meat surface, which is ideal for marinades. Try this spin on an old favourite!
